  1. 300 grams of dark chocolate
  2. Yolks 5
  3. Egg whites 5
  4. 125 grams of wheat flour
  5. 150 grams of unsalted butter
  6. 150 grams of refined sugar
  7. 5 cc of vanilla extract


Put the butter and the finely chopped chocolate in a bowl in a bain-marie until melted and the two are mixed well.

At the same time, beat the egg whites until stiff. At the point, add the warm butter chocolate mixture.

Once ready, add the sugar, vanilla, egg yolks, beat well and finally add the wheat flour until incorporated, but without mixing too much so that the texture is not affected.

Butter the molds and then flour them. Serve the mixture that is 1 centimeter from the edge and cover.

You can take them to the fridge and reserve until just before serving them.

Once it's time to bake them, preheat oven to 350°C and bake for 10-12 minutes.

Once done, wait for them to cool for 2 or 3 minutes. Then take them out of the mold and serve with a scoop of shortbread ice cream. You can touch it up with snow sugar.
